The company EVOIKI ZIMI SA was founded in 1984 in Psachna Evia under the name "Zimarika Psahnon" as a small personal business that produced traditional pasta using only the finest ingredients and faithfully adhering to traditional recipes. It was run by experienced landladies.

In the 1990s, Evoiki Zimi moved its operations to its own facilities in Castella, Evia, where it now produces frozen dough products. In 2004, a portion of the production moved to brand-new, cutting-edge facilities in the Dokos Chalkida district as a result of the company's expansion. At the end of the decade, the business has one more production unit in Chania, Crete. Under the brand names "Zimarika Psachnon" and "Zimi Psahnon," the company vigorously expands its product distribution network and continuously acquires new customers in Greece and abroad.

The success continues with crust fillo pastry, puff pastry, fillo kataifi, traditional pies, puff pastry pies, pizzas, and croissants, as well as homemade country style fillo pastry. Nowadays, smaller retail stores as well as the majority of large supermarkets across Greece carry the company's products. Through the ongoing growth of the sales network on the global market, a similar development has been achieved in product exports.
